Besides buying myself a giant new food processor on Black Friday {it’s amazing by the way}, I haven’t really thought about Christmas. With only a week left until Christmas, you could say I’m cramming in all of the holiday feelings {and shopping}.

To help me get in the Christmas spirit, I’ve been playing around with different Christmas-esque flavors like cinnamon, nutmeg, and peppermint {hint hint: upcoming recipe}. For this recipe, I wanted to take cinnamon and nutmeg and kick it up a notch, so I drew inspiration from an unintended Christmas tradition my family practices. For as long as I can remember, my mom has gone to World Market around the holiday season and stocked up on tins of these Swedish gingersnaps that we devour throughout the holidays. These cookies have the perfect balance between spicy and sweet that you can’t help but eat more than one at a time. Dreaming of these gingersnaps, I knew I had to recreate the flavors.

These gingersnap bites may not have the same crunch as the original Swedish gingersnaps, but boy do they have a dreamy spiciness {I promise I’m not the only one who thinks that}. I made a batch of these for my fellow yoga teacher trainees this past weekend and they were a huge hit, so I will definitely be making these over and over again throughout the holiday season.

  • All the spices used in this recipe are rockstar anti-inflamatories. In fact, I once read a study that predicted ginger will replace ibuprofen once scientists are able to extract it enough {how AWESOME is that?!?!}.
  • Molasses contains higher levels of antioxidants than other readily available sweeteners. These antioxidants help the body protect against oxidative damage.
  • Ginger can help keep nausea at bay.

Raw Vegan Gingersnap Bites

These raw vegan gingersnap bites are packed with the spicy-sweet flavor of cinnamon, ginger, nutmeg, and cloves. Perfect for sharing over the holidays!
Serves: 20 gingersnap bites
Ingredients
  • 1 inch piece of ginger, peeled
  • 1 cup almonds
  • ½ cup pecans
  • ¾ cup Medjool dates
  • 1 tsp cinnamon
  • ½ tsp cloves
  • ½ tsp nutmeg
  • 1 tbsp unsulphured blackstrap molasses
  • 2 tbsp maple syrup
Dusting
  • 1-2 tsp of cinnamon
Instructions
  1. In a food processor, combine the piece of ginger, almonds, and pecans. Chop until nuts and ginger are finely chopped.
  2. Add the dates, cinnamon, cloves, nutmeg, molasses, and maple syrup to the food processor. Blend until dates are well chopped. The mixture should be fairly sticky now.
  3. Scoop 1 tbsp of mixture and use your hands to roll the mixture into a ball. Repeat until you're out of the mixture.
Dusting
  1. Add 1 tsp of cinnamon to a small jar. Drop 1 gingersnap ball in the jar.
  2. Close lid and shake until the ball is coated with cinnamon. You may need to shake off any excess cinnamon. Repeat with remaining balls. If you run out of cinnamon, add another tsp to the jar. Then enjoy!
